Makes 4 servings.
4 boned and skinned chicken breast halves
1/4 cup olive oil
1/4 cup lemon juice
2 garlic cloves minced
2 teaspoons dried oregano
Salt and ground black pepper to taste
Make a marinade: Place olive oil in a small bowl. Whisk in
lemon juice, garlic, and spices.
Place chicken in a shallow pan or zippered plastic bag. Pour marinade over
chicken. Cover pan or seal plastic bag. Refrigerate. Marinade at least four
hours or overnight, turning chicken pieces or bag to marinade evenly.
Remove chicken from marinade and grill over a hot barbecue fire until chicken
tests done. (Juices will run clear.)
